Ghee, Grit, Amrit, Clarified Butter

In ancient times, Ghee was known as Amrit which means nectar for immortality. Our nectar is made in the same centuries old process called the Bilona method.
Everyday, before the Dawn, our Grameya Devi’s Venture to the farm to milk the cows. The cows are milked only after the calf’s stomach is full with its milk. The Devi’s ensure that the cows are fed nutrition rich fodder.
If you closely observe the process of milking a cow, it’s very emotional and very very humane. Traditionally, cows are milked twice in a day – Dawn and Dusk. 
 
When the Devi’s approaches the cow to milk them, the calves starts behaving like an infant does. The calves are released, in the herd of cows, they instantly recognise their mother and rushes for the fresh feed. Once the calf has plentiful of milk, then the Devi’s starts milking the cow.
 
The fresh milk is taken to the kitchen where it is heated to optimum temperature and then the curd is added to it. Overnight, it ferments and you get rich creamier fresh curd. 
 
The curd is then taken to a pot and a Bilona is used to churn out the butter. Bilona is an age old wooden device which has wings beneath it and is attached to a string. The string when moved to and fro, the Bilona moves once in clockwise and then anti clockwise. This process is called the Bilona process of making Ghee. 
 
After a considerable time, the fresh butter rises to the top. The butter is transferred to another pot. The leftover curd is now transformed into freshly brewed Buttermilk/Chhaach/Chaas.
 
The fresh butter is then heated on wood fired Chulha. Slow heating helps to retain the aroma and the nutritional values of ghee and it also makes it Daanedaar. 
 
After some time, the soul soothing aroma engulf the entire home and a transparent golden Elixir is obtained. The distinct aroma signals the Ghee is ready. The whole process demand a great level of patience and experiance to obtain the perfect ghee. The procedures ars old and time tested which has been passed on from generation to generation.
 
Whenever you visit your Nani or Dadi at your ancestral home, ask them how they used to make ghee. The answer has to be Bilona method.
